Can I add an effect to my Waterfall (Bridge) chart

No, you will have to delete the existing bridge and create a new one.

More generally, you cannot add or delete rows/columns in the source data whilst retaining the same bridge. However, you can edit the source data and see your changes reflected on the chart.
